Detox: Food (sweet potato & black bean burrito guts)



Over winter break I got down with some vegetable shortening and made amazing homemade tortillas. I am chomping at the bit to share the recipe with you BUT it's going to have to wait until after the detox in February. Please don't cry, look, I made you some burrito guts. They're almost as good as the entire burrito! 




Sweet Potato & Black Bean Burrito Guts
serves 2


2 sweet potatoes, peeled and cut into chunks
1 TBL olive oil
1/2 yellow onion, chopped
2 garlic cloves, chopped
1 tsp chile molido pasilla (mild chile powder)
1 tsp cumin
salt & pepper
1 can black beans
2 cups cabbage, shredded
1 avocado
1 tomato, chopped
1 lime


Place the sweet potato chunks in a large pot and fill with water until potatoes are just covered. Bring to a boil, then down to a simmer for about 10 minutes or until soft when pierced with a fork. 


In another pan, saute onions, garlic, and spices with the olive oil over medium high heat until soft. Add beans and salt & pepper to taste and heat through. 


To serve, scoop some sweet potato on a plate, top with some of the bean mixture, pile high with cabbage, avocado, and tomato and finish with a healthy squeeze of lime. Enjoy!


Throughout the month of January I will be detoxing my life through mind, body, and spirit restoration. My daily detox pursuits include eating fresh and getting at least 30 minutes of exercise. In addition, I'm challenging myself and you all to do just one extra thing per day to detox our lives.

Day 9 of 31: Organized my jewelry and did a shoe overhaul. Lindsay suggested I make a jewelry board to organize my necklaces. I took the lazy-woman route and hammered a few nails in the wall next to my dresser and hung them on the nails. It's so nice to be able to see them all at once! 

Day 10 of 31: After taking the dog for a walk on a nearby hiking trail, I decided to detox my lungs. We drove as high as we could up Mt. Hualalai, into the cloud forest, and took some deep breaths of the freshest air. It was a clear day as well and could see all the way down to the shore.

  1. I just want to roll those guts into a tortilla! NO! I will resist that temptation. LOL

    Hiking with the dogs sounds like a lot of fun! My dog is not good at hiking. Since she is a hound, there is a greater chance of her running off and not coming back.

    I haven't started on organization yet. I'm saving that for the weekend! OH--ya.

  3. Gwen, you are so talented...I think I would love this recipe. Sweet potatoes are hands down one of my favorite foods (okinawan girl here) as well as avocado. I've been very unhealthy these past few weeks (I always get that way during year end closing) but I'm ready for my own detox.

  4. This is fabulous! I've done something very close to this. It's sooo tasty. Your walk sounds like a fabulous experience. I'm diligently adding chlorella supplements to my daily intake to help nurture my body and aid it in it's own detoxification processes. When I'm feeling overwhelmed, grumpy or frantic, I'm reminding myself to breath - check in with my body, release any undesirable tension in the abdomen, ribs and neck and make sure that I breath as deeply into my abdomen as possible. It really helps root the mind, release the stress and let go of those emotions that can really clog up the works and become toxic.
