Pink Salad for a Pink Party


My friend (and devoted reader) Patty threw her daughter a "pink party for her pink friends at the pink beach," for her third birthday. I'm quoting the now-three year old, in case you were wondering.


Guests arrived in their pinkest attire and munched on pink cupcakes in the rosy glow of the sunset.


Oh to be three when the world really is a glowing rouge.


This salad will brighten any occasion, perfect for a potluck.

Pink Slaw
serves 6-8

1/2 head of cabbage, shredded
1/2 beet
2 TBL mayo
juice of 1/2 lemon
1 tsp fresh ginger
1/4 tsp red pepper
1 green onion, chopped

In a large bowl, whisk with a fork the mayo, lemon juice, and red pepper. Grate ginger and beet over the bowl into the mayo mixture and whisk again. Add the shredded cabbage and chopped green onion and stir to coat. Enjoy!

  3. I think the purply pink cabbage is the prettiest and a pink party at the beach is a party I'd want to attend :-) Btw, I tried the sea salt latte in paia today. It is a different owner now but fortunately one of the girls knew how to make it. Now I just need to make your interpretation at home.
