Black Bean, Spinach & Barley Soup


"Mmmm...noodle soup." Fifteen 90's points to whoever knows what that's from.

Sorry, this isn't noodle soup but it is very, very easy to put together and very, very easy to eat.

I'm nursing a sore throat today and contemplating calling in sick tomorrow. Things that make me feel better when sick: soup, 7-Up, No Reservations, tea with lemon and honey, the Neti pot, gargling with salt water, laying around in boy style undies, lavender baths, whining.

Black Bean, Spinach & Barley Soup
Inspired by Fitness Magazine
serves 4

3 cans vegetable broth
1 can black beans
1 can crushed or stewed tomato
1/2 cup uncooked barley
2 cloves garlic, chopped
1 tsp dried thyme
6 cups torn fresh spinach leaves
salt & pepper to taste

Toss all ingredients in a slow cooker and cook on high for 2 to 2 1/2 hours or until barley is done. Be sure to taste broth before adding salt, some broths are very salty. Easy, yes? Enjoy!

  1. That looks SO good! I'm sorry to hear that you are not feeling well. I'm starting to feel sick, so I'm trying to stay warm and sleep a lot.

    OOH, I can't pin point where that line is from, but it's going to bug me. You might as well tell me. LOL

  2. sounds like a super simple and tasty soup. that's perfect when feeling under the weather and minimizes the effort with great payoffs. i'm glad to know i'm not the only one who whines when not feeling well. I'm trying so hard to internalize my whining and not lambast the world with it. I don't think I could keep mine to a subtle one liner like you managed to. Once i open the floodgates it'll just keep pouring out. hope you're feeling better soon!
