Weeknight salad:
Farm fresh broccoli, sweet potatoes, lettuce and tomatoes with garden asparagus and chard. Topped with a little goat cheese and black pepper.
I love all those colors!!!!! I would eat that plate in a heartbeat. LOL Okinawan sweet potato is my weakness. I even give them to my dogs. I'm ONE of those owners. Shhh, don't tell anyone.
I love it! I'm definitely making it. Nummy nummy! Haven't seen any purple sweet potatos here so I won't have the pretty color contrast but I'm sure it'll be stuper tasty. I made a green bean salad with arugula tossed in garlic oil, salt, and pepper. It was really tasty and simple.
